CHOCOLATE SAGO PUDDING (GF DF V)

INGREDIENTS:

MAKES 5 POTS
  • 1 CUP SAGO
  • 1 LITRE COCONUT MILK (WE USE COCOQUENCH)
  • 3/4 CUP PURE MAPLE SYRUP
  • 1 CUP CACAO POWDER
  • 1 TSP PINK SALT
  • 1/2 TBSP CORN FLOUR

METHOD:

  1. COOK SAGO IN BOILING WATER FOR 30 MINS OR UNTIL SOFT.
  2. MIX ALL OTHER INGREDIENTS TOGETHER (EXCEPT THE CORN FLOUR) IN A POT AND SIMMER FOR 5 MINS.
  3. STRAIN SAGO AND COMBINE WITH OTHER INGREDIENTS.
  4. WHISK IN CORN FLOUR SLOWLY TO MIXTURE FOR APPROXIMATELY 3 MINUTES UNTIL IT STARTS TO THICKEN (KEEPING IN MIND IT WILL THICKEN MORE ONCE IT SETS IN FRIDGE).
  5. ALLOW MIXTURE TO COOL IN FRIDGE.
