Sticky Date Pudding – the Nodo way! Our Best Ever Banana Bread Mix takes a healthy twist with this classic winter dessert, creating a gluten free dairy free pudding to please the whole family. Also starring our Wake Up Beautiful espresso, this one is definitely going to be a favourite with the coffee lovers.
Note: You can substitute the espresso + boiling water for 120mL French press or instant coffee.
Preheat the oven to 180C (160C fan-forced).
Place the chopped dates in a small bowl, then pour the espresso and boiling water over the dates. Ensure that all of the dates are submerged in the liquid. Leave to soak for 10 minutes.
Add the Nodo Banana Bread Mix to a large bowl and create a well in the centre. Add the mashed banana, oil, eggs, and allspice.
Whisk the wet ingredients together in the well using a fork, and then add the soaked dates including the liquid.
Combine the wet ingredients with the dry mix.
Pour the mixture into a large non-stick baking dish.
Bake for 35-40 minutes. The pudding is done when a skewer pierced into the pudding comes out clean.
Serve warm with ice cream and bananas.
Note: For easy caramelised bananas, halve a banana lengthways and then sprinkle some rapadura sugar onto the cut side of the banana. Place under a grill until the sugar caramelises.
