Blueberry Donuts (GF)

Makes 6 large donuts

Prep time: 5 minutes

Cook time: 15 minutes

 

INGREDIENTS

  • 300g Nodo Baked, Not Fried Donut Mix
  • 1 eggs
  • 2 tbsp oil of choice (or oil of choice)
  • 1/2 cup thick greek yoghurt
  • 1 cup blueberries

METHOD

  1. Pre heat oven to 180ºC fan forced.
  2. Whisk together the wet ingredients (eggs, oil & yoghurt).
  3. Add in the donut mix to wet mixture.
  4. Using a spatula, stir the mixture until combined.
  5. Pour mixture into a greased donut mould (or muffin tin if you don't have donut mould). We recommend using a nodo donuts silicon baking mould.
  6. Evenly distribute the blueberries into each donut mould.
  7. Bake for 15 minutes, or until the donuts feel lightly springy and just done. 
  8. Let cool slightly before popping carefully out of donut mould.
  9. Melt 100g butter (or dairy free alternative) and brush donuts with butter before sprinkling with cinnamon sugar mix
