Savoury Kimchi Waffle (GF DF)

Inspired by our cafe’s ever-so-popular savoury popcorn chicken waffle recipe in circa 2017 – we’re bringing you a super simple, yet DELICIOUS kimchi waffle recipe to spice up your morning routine.

This recipe is a classic nodo twist on the traditional waffle. It’s a scrumptious fusion of Korean flavours and breakfast classics with a touch of tangy kimchi that adds a delightful kick to each bite. The best bit – they’re honestly super easy to make. All you need is one bowl, a waffle iron and what ever toppings you desire. In just under 20 minutes, you'll have a stack of golden, crispy waffles that are not only gluten-free and dairy-free but also bursting with mouthwatering flavour.

Whether you're looking for a quick and wholesome breakfast, a unique brunch option, or a delightful lunch, these savoury kimchi waffles have got you covered. Trust us, it’s worth to try even if it sounds a bit out there. They’re so good – just go for it!

BAKE ALONG

 

INGREDIENTS

Waffle Ingredients:

  • 1 cup kimchi
  • 1 1/2 cups Nodo Not-So Plain Flour
  • 1 tsp baking powder
  • 3/4 cup water
  • 2 Eggs
  • 3 tbsp extra virgin olive oil
  • Handful of shallots, finely sliced (optional)

      Toppings (Optional)

            • Fried egg
            • Kewpie mayo
            • Tonkatsu sauce
            • Japanese seasoning (onion, garlic, chilli and black sesame seeds)
            • Shallots
            • Snow pea sprouts

              

            METHOD

            1. Add eggs, oil and water to a large mixing bowl and whisk to combine.
            2. Add Nodo Not-So Plain Flour and baking powder to the mixture. Mix to combine until it looks like a smooth batter.
            3. Add in kimchi and finely sliced shallots.
            4. Heat up your waffle iron according to manufacturer’s instructions and spray with cooking spray.
            5. Carefully pour the waffle mixture into the waffle iron – 3/4 cup per waffle to make 4 waffles.
            6. Cook the waffles according to manufacturer’s instructions or until golden brown.
            7. Divide the waffles between serving plates and top with your desired toppings. Our favourite toppings are listed above.

              

            Kates Hot Tips!

            1. These can easily be stored in the freezer and eaten a few days later. Simply take out of the freezer, pop in the toaster, top with your favourite toppings and you're good to go!
