Directions
Blackout Brownie
Preheat oven to 150°C.
Line cake tin with baking paper.
Mix brownie mix, eggs and butter until smooth.
Bake for approx. 30 mins.
While the brownie cools, start preparing the cheesecake filling
Basque Cheesecake
Increase oven to 175°C.
Beat cream cheese and sugar until smooth.
Add eggs one at a time
Mix through cream and flour
Pour cheesecake mixture over brownie base
Bake 60 mins until deeply golden with slight wobble.

Basque Cheesecake Tips
Don’t worry if the top gets very dark — that’s the signature Basque cheesecake look.
Room temperature cream cheese will give you the smoothest filling.
The centre should still have a slight wobble when removed from the oven.
Allow the cheesecake to cool before slicing for the dreamiest texture.
Chilling overnight makes it even better the next day
