Directions
Pre heat waffle iron* to desired setting, spray with non-stick cooking spray and set aside.
In a mixing bowl, add egg, milk and butter or oil - whisk to combine.
Add in Better Batter mix to wet mixture and wisk to combine. Please note the mixture will be very runny.
Pour your batter into your waffle iron so the grid is just covered.
Cook according to desired settings on your waffle iron.
Remove waffles from iron once cooked, crispy and golden.
Blueberry Compote
In a small saucepan, combine 1 cup of the blueberries with the maple syrup, water, lemon juice and vanilla, then bring to a gentle simmer over medium heat. Cook for 10 minutes, stirring occasionally.
In a small cup, mix corn flour with 1 tbsp of water to form a smooth slurry, stir the mix into the blueberries.
Add the remaining 1 cup of blueberries and cook for a further 8 minutes.
Remove from heat - the mixture will thicken and become beautifully jammy as it cools.
Recipe Note
Serve waffles warm from the iron topped with double cream, blueberry compote and an extra drizzle of maple syrup for the ultimate treat.
