Donut Muffins

Makes 6 donut muffins

Prep time: 5 minutes

Cook time: 15 minutes

 

INGREDIENTS

  • 300g Nodo Baked, Not Fried Donut Mix
  • 1 eggs
  • 2 tbsp oil of choice (or oil of choice)
  • 1/2 cup thick greek yoghurt
  • Strawberry Jam or filling of choice (chocolate spread works well here!)


METHOD

  1. Pre heat oven to 180ºC fan forced.
  2. Whisk together the wet ingredients (eggs, oil & yoghurt).
  3. Add in the donut mix to wet mixture.
  4. Using a spatula, stir the mixture until combined.
  5. Evenly pour half the mixture into 6 greased muffin moulds
  6. Add 1/2 tbsp of strawberry jam or filling of choice.
  7. Evenly pour over the other half of the mixture.
  8. Bake for 15 minutes, or until the donut muffins feel lightly springy and just done. 
  9. Let cool slightly before popping carefully out of donut mould.
  10. Melt 100g butter (or dairy free alternative) and brush donuts with butter before sprinkling with cinnamon sugar mix
