TAMAGO
Serves 2
Inspired by the famous Japanese Tamago Sando.
INGREDIENTS
- 2 Slices of Nodo Plain Sourdough OR Nodo Seeded Sourdough
- 1 Tbsp unsalted butter, softened
- 3 Large free-range eggs
- 2 Tbsp Gevity Mayo (or Kewpie)
- Pinch of sugar
- Pinch of sea salt
- Cracked black pepper
- Chives, finely sliced (optional for garnish)
METHOD
- Prepare a bowl of ice water
- Bring a medium pot of water to the boil. Carefully lower in the eggs and boil for 10 minutes for hard-boiled.
- Turn off the heat and let eggs sit for 1 minute before transferring to the ice bath. Chill for 2 minutes, then peel while still slightly warm.
- Place peeled eggs in a mixing bowl and cut in half, then scoop out egg yolk. Mash the egg yolk and then mix in mayo, sugar, salt and pepper.
- Dice the egg whites and then fold into yolk mixture.
- Spread softened butter onto toasted sourdough
- Spread generously with egg salad.

AVOCADO TARTINE

Classic avo toast but elevated with tangy goat’s cheese and fresh sliced cumquats
INGREDIENTS
METHOD
- TPrepare sliced avocado, goats cheese and sliced cumquats.
- Add avocado sliced to toasted Sourdough, then crumble goats cheese on top.
- Garnish with sliced cumquats.
- Season with salt and pepper, to taste.

SWEET TARTINE

Chocolate hazelnut spread and strawberries, the perfect duo.

- Prepare sliced strawberries.
- Spread an even layer of VEGO Chocolate Hazelnut spread across toasted Sourdough, then layer sliced strawberries.
- Enjoy!
