Apple Cinnamon Donut Loaf Cake (GF DFO)

Our Apple Cinnamon Donut Loaf Cake is a delightful twist on our best-selling apple cinnamon donut. Using the Nodo Baked, Not Fried Donut Mix, this irresistible cake is so easy to make - you'll need 1 bowl, 1 loaf pan, 4 simple ingredients and only 5 minutes to prepare.

After 50 minutes of baking, you're left with a with a soft and moist apple cinnamon cake that melts in your mouth, and a heavenly aroma that will fill your home and have your family and friends begging for more.

The warm and cozy flavours of cinnamon and apple are perfectly balanced in this cake, making it the perfect dessert for any occasion. And the best part? It's completely gluten free, can be easily made dairy free so you can indulge without worrying about any dietary restrictions.

INGREDIENTS

  • 500g Nodo Baked, Not Fried Donut Mix
  • 2 eggs
  • 1/4 cup extra virgin olive oil
  • 1 cup thick greek yoghurt (or coconut yogurt if dairy free)
  • 3 green apples, diced in 1.5cm chunks
  • Native cinnamon sugar (included in the Baked, Not Fried Donut Mix)

 

METHOD

  1. Preheat oven to 175ºC, fan forced and grease or line a cake loaf tin.
  2. Whisk together the wet ingredients (eggs, oil & yoghurt).
  3. Add in the donut mix to wet mixture.
  4. Using a spatula, stir the mixture until combined.
  5. Add the apple chunks into the bowl, stir and fold the mixture until combined.
  6. Pour half the mixture into the loaf tin. Sprinkle a layer of the included native cinnamon sugar on top of the mixture. Follow by pouring the remaining mixture on top and sprinkling the remaining cinnamon sugar on top. So you should have 4 layers. 
  7. Bake for 50 minutes, or until the cake feel lightly springy and just done. 
  8. Let cool slightly before slicing.
