INGREDIENTS

• 210g (1 1/2 cups) Nodo Self Raising Flour
• 150g (3/4 cup) Nodo Organic Rapadura Sugar
• 330g (roughly 3 large) ripe bananas (blended)
• 1 x free range egg, white only
• 1 x free range egg, whole
• 125g  (1/2 cup) coconut yoghurt
• 30g (2 tbsp) coconut oil (melted) or macadamia oil
• 1 tsp cinnamon
• 1 tsp vanilla extract
• 1/2 tsp salt

METHOD

1. Preheat the oven to 180c. 
2. Whisk together all the wet ingredients (eggs, banana, yoghurt, oil & vanilla).
3. In a separate bowl, add the Nodo Self Raising Flour, Nodo Organic Rapadura Sugar, cinnamon and salt. Mix gently.
4. Make a well in the centre of the banana bread flour mixture and stir in the wet ingredients with a spatula until just combined.
5. Scrape the gluten free banana bread mixture into a greased baking dish and bake for 40-50 minutes, or until the centre feels slightly-springy and just done.
6. Let sit, then enjoy with as many people as you can.
