Crinkle Top Brownies (GF)

Everyone needs a good, easy homemade brownie recipe up their sleeve, and these brownies absolutely deliver. They’re rich in chocolate flavour, have a gooey middle and the best crisp-like crinkle top. We swoon every time we bake these bad boys! No one could ever tell that they are gluten free. 

Patience is a virtue here, as this recipe requires you to add your ingredients slowly. However, like all nodo recipes, we focus on making the most delicious treats, in the simplest way. You only need six ingredients and they’re ready in just over an hour. You’ll only need two bowls - one to melt the chocolate and butter, and one to mix your ingredients in. We love to use a kitchen aid, but any electric mixer will do the trick.

INGREDIENTS

  • 175g 70% Dark Chocolate
  • 100g Butter
  • 3 Eggs
  • 1 Cup Raw Caster Sugar
  • 95g Nodo Gluten Free Not-So Plain Flour
  • 2 tbsp Cocoa Powder

         

        METHOD

          1. Pre-heat your oven to 150ºC fan forced and well-grease or line an 8 inch square baking tin.
          2. In a double boiler, mix melt and mix together the butter and dark chocolate. A microwave also works - just be sure to melt it slowly, stiring every 30 seconds or so. Set aside melted mixture to cool.
          3. In your larger bowl, or Kitchen Aid, slowly whip the eggs. Then gradually, slowly adding the sugar and continue to whip for around 5 minutes, until the mixture is pale in colour and has increased in volume. It’s important you get this step right because this is what gives your brownie a beautiful crackle top. 
          4. While mixing on a slow speed, slowly pour in the melted chocolate and butter mixture to your egg and sugar mixture, until well combined. 
          5. Shift in your cocoa powder and gluten free flour to the wet mixture, then gently fold it in until the wet and dry ingredients are well combined.
          6. Pour your mixture into your well-greased baking tin.

          7. Pop in the oven and bake for 35-40 minutes – until the top is set and a knife inserted in the centre comes out with a few crumbs. Remove tin from oven and place on a wire rack to cool completely.

          8. Carefully slice up and enjoy!
