Burger night just spiced up a notch with our homemade, gluten free, dairy free take on KFC's Zinger Burger. Staying true to the Nodo at Home philosophy, this recipe is not only healthier, but it's also super easy to make and will have you and the family devouring mouth-watering burgers in under 30 minutes.
To cook the chicken, you can easily use an air fryer or sub for a shallow fry the old fashioned way. Either way, you'll end up with juicy, crispy chicken. And, if you're not dairy free and looking for a little extra flavour, we love adding a slice of Swiss cheese to our Zingas.
Like any other burger night, this burger is best served with a side of homemade hot chips.

Place all of your spices and herbs into a Thermomix or regular food processor. Blitz for 30 seconds, then scrape down and repeat until you have a fine grind.
Add in the flour and blitz again for another 20 seconds or until well combined.
Transfer your spice mixture to a plate. In another bowl, whisk the egg to make an egg wash.
Coat your chicken breast in the egg, then coat in your spice mixture to crumb. We repeat this step to give the chicken a real good crispy coating.
Transfer crumbed chicken to another plate and repeat until all chicken is coated.
If cooking in an air fryer, pop your chicken in the air fryer and spray with oil. Cook for around 15 minutes, turning half way (around 8 minutes). If shallow frying, pour a generous amount of oil to your shallow pan, allow to heat up; then carefully place the chicken into the pan – cook until all white in the centre. Repeat until all of the chicken has been fried.
Place chicken onto paper towel to drain any excess oil.
To make the Burger:
Lightly toast your gluten free buns in the air fryer or on your pan.
Spread a decent layer of your sirancha mayo onto the bottom half of your bun.
Top with lettuce, chicken, then cheese and tomato if using.
