Winter means comfort food, and comfort food to us means this decadent, gluten free blondie recipe. Jam packed with crunchy, honey-glazed macadamias and gooey chocolate chunks, these blondies are nothing short of pure genius.
The macadamias and chocolate offer the perfect twist on a classic blondie. Chewy meets gooey meets crunch. Sweet white chocolate chips combine with deep dark chocolate for a truly blissful combo.
Blondies are, in essence, brownies without the cocoa powder. That means you want it to come out of the oven seeming a little underdone.
Don’t use the cake method — if your skewer comes out clean, you’ve gone too far. Not to worry — it’s a perfect excuse to make these delicious goodies all over again. Perhaps while listening to Blondie.

INGREDIENTS:
Makes 9-12 gluten free blondies
- 80g almond meal
- 100g raw caster sugar

135g Nodo Organic Rapadura Sugar
- 115g unsalted butter - melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2 free range eggs

190g Nodo Gluten Free Plain Flour
- ½ tsp salt
- 150g white chocolate chips
- 40g dark chocolate - roughly chopped (We used Lindt)
- 100g macadamias
- 2 tsp honey
METHOD:
HONEY MACADAMIAS RECIPE
- Preheat oven to 160C fan forced.
- Line a baking tray with baking paper.
- Toss the macadamias with the honey in a bowl and then place on the prepared tray.
- Bake for 10 minutes, stirring halfway until shiny and golden.
- Set aside to cool.
GLUTEN FREE BLONDIE RECIPE
- Preheat the oven to 180C fan forced.
- In a stand mixer (or using a hand mixer), whisk together butter, sugars, eggs, and vanilla until just combined.
- Add flour, almond meal, salt, and baking powder, and mix until just combined.
- Fold through the white chocolate chips.
- Place the mixture into a 20cm square cake tin, lined with non-stick baking paper.
- Top with your honey roasted macadamia and the roughly chopped dark chocolate.
- Bake for 25-30 minutes, until the top is light brown and a skewer inserted in the centre comes out with a few crumbs.
- Leave in the tin to cool.
- Transfer to a wire rack.
