Let's get cooking, friends!
- Extra fresh berries
- Maple Syrup
Preheat the waffle iron.
In a large bowl, whisk the egg with the milk and coconut oil.
Add the dry waffle mix and fold through to combine.
Add the frozen blueberries and fold through to combine.
Pour approximately ¼ cup waffle batter into the waffle iron at a time, or just enough to cover the waffle grid.
Cook according to the setting on your waffle iron.
Transfer the cooked waffle / or waffles to a wire rack and repeat this process with the rest of the batch.
When the waffles are just warm to touch, carefully roll up into a wrap style waffle, arrange on a plate and top with fresh berries and maple syrup.
Handy Tips & Notes:
Adapt this super easy recipe with any type of fresh or frozen berries! If using blackberries or strawberries, cut them down to the size of a blueberry.
