INGREDIENTS
MAKES 6 DELICIOUS LIGHT + FLUFFY WAFFLES
- 250g (2 CUPS) NODO SELF RAISING FLOUR
- 50g (1/4 CUP) RAPADURA SUGAR
- 2 CUPS COCONUT MILK
- 2 EGGS
- 1/2 CUP RICE BRAN OIL
- 1 TSP VANILLA
- PINCH OF SALT
METHOD
- BEGIN BY PREHEATING YOUR WAFFLE PRESS.
- IN A LARGE BOWL, START BY SIFTING THE FLOUR, THEN ADD THE SUGAR AND SALT.
- IN A SMALL BOWL, SEPARATE THE EGG WHITES FROM THE YOLK AND BEGIN WHISKING THE WHITES IN A MIXER UNTIL LIGHT AND FLUFFY.
- USING A SEPARATE BOWL, WHISK THE EGG YOLKS, THEN COMBINE THE MILK, OIL AND VANILLA. STIR WELL UNTIL COMBINED.
- CREATE A WELL IN THE CENTRE OF THE DRY INGREDIENTS AND SLOWLY POUR IN THE WET MIXTURE. MIX WELL, THEN GENTLY FOLD IN THE EGG WHITES.
- POUR MIXTURE INTO THE WAFFLE IRON, UNTIL ABOUT 3/4 FULL.
- LEAVE TO COOK FOR 5-7 MINUTES OR UNTIL GOLDEN BROWN.
