Banana Bread Choc Chip Cookies (GF V)

Makes 10 cookies

The softest and most addictive Banana Bread Chocolate Cookies you'll ever have!

 

INGREDIENTS

  • 1 1/2 cups Not-So Plain Flour
  • 1/2 cup melted butter, slightly cooled
  • 1/2 cup brown sugar
  • 1 tbsp raw caster sugar
  • 2 medium sized bananas
  • 1 free range egg
  • 1 tsp vanilla extract
  • 1 tsp bi-carb soda
  • 1/2 tsp baking powder
  • Chocolate chips

 

METHOD

  1. Preheat the oven to 190C (170C fan-forced)
  2. Mix butter and sugar in a bowl until combined
  3. Add in bananas, egg and vanilla extract. Mix until combined and no more big chunks of banana are left.
  4. Add in 1.5 cups of Nodo Not-So Plain Flour, bi-carb and baking powder. Stir to combine. If mixture is still very wet, add in 2-3 tablespoons more of flour.
  5. Add in chocolate chips and mix to combine
  6. Scoop the cookie dough into 12 evenly-sized balls on a non-stick or lined baking tray
  7. Bake for approximately 10-12 minutes. Once baked, cookie should be soft to touch and feel quite fluffy
  8. Allow to cool before enjoying!
