Brownie Cookies (GF)

Bake time: 12 minutes

 

A recipe for the chocolate lovers – Kate's favourite gluten free brownie cookies! Inspired by our cafe's recipe - these cookies tastes like the edges of a decadent brownie, but has a gooey centre for the brownie centre lovers too. It’s the best of both worlds.

They're super easy to make and take no time at all. Enjoy them fresh out of the oven or with your favourite ice cream. It's the perfect all-round sweet snack.

INGREDIENTS

  • 200g Dark chocolate (we use chips)
  • 125g Unsalted butter
  • 100g Raw caster sugar
  • 2 Eggs
  • 20g Cocoa powder (about 3 tbsp)
  • 130g Nodo Life-Changing Self Raising Flour
  • Pinch of salt

        

      METHOD

      1. Preheat oven to 180ºC fan forced.
      2. Melt together dark chocolate and butter - preferably in a double boiler over a stove top. Stir until melted mixture is smooth with no lumps. Set aside.
      3. In a mixing bowl with whisk attachment, mix together raw caster sugar and eggs until its creamy and tripled in size.  
      4. Slowly pour chocolate mixture into egg and sugar mixture.
      5. Sift in Nodo flour and cocoa powder.
      6. Fold together until mixture is smooth with no lumps.
      7. Spoon mixture onto a lined baking tray, leaving enough room between each to allow them to spread.
      8. Bake in oven for 12 minutes.
      9. Top with a pinch of salt and voilà.
